Refreshing and healthy, this island style summer salad is great for picnics and outdoor events.

Tropical and refreshing this no cook entree salad is perfect for summer suppers and picnics. With garbanzo beans as the central protein it's also a great fit for Meatless Mondays.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 2 dinner size servings

Ingredients:

  • 1 head butter lettuce or leaf lettuce, rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 cup fresh tomato, chopped
  • 1/2 cup sliced bell peppers, any color
  • 1 cup cubed pineapple

Preparation:

Toss all ingredients together in a large bowl.

Dress salad with jalapeno lime dressing and enjoy!
