Grilled Veggie Antipasto
Toss thick slices of hearty vegetables (e.g. carrots, zucchini, eggplant, bell peppers etc.) with a couple spoonfuls of store-bought pesto. Grill the veggies over medium heat or roast them in the oven at 425° F until they are softened and caramelized. Serve the vegetables alone or together with bruschetta.
Bruschetta
In a small bowl, combine 2 diced tomatoes, 1 tablespoon chopped basil, 1 diced clove of garlic, 1 tablespoon olive oil, salt, and pepper. Stir until combined. Serve on top of grilled or toasted French bread slices.
Dips and Chips
Avoid heavy cheese dips, full fat cream dips, and fried chips by choosing baked whole grain tortilla chips, toasted whole wheat pita bread, whole grain cracker-chips like Crunchmasters or Blue Diamond Nut Thins and use fresh vegetables to accompany the dips!
Fresh Salsa
Stir together 3 chopped tomatoes, ¼ cup chopped cilantro, ¼ cup diced onion, 1 diced jalopeno, and the juice of 1 lime. Season with salt and pepper to taste. Serve alongside guacamole with baked tortilla chips.
Simple Guacamole
Mash together 2 avocados, ¼ cup diced onion, ¼ cup chopped cilantro, the juice of one lime, salt and pepper and you get perfect guacamole! If you like more flare with a heartier guacamole, try adding in a half diced jalapeno or chopped tomato. Serve with baked tortilla chips. Please note - guacamole is often not thought of as healthy, but it is full of fiber and healthy fats from avocado - just watch the portion size to keep calories in check!
Ranch Dip
Use a simple ranch seasoning packet and substitute plain Greek yogurt for sour cream or mayo for a healthier option that does not sacrifice taste.
